Healthy Recipe for Tofu and Carrots

This tasty tofu vegetarian recipe makes a nourishing breakfast or lunch, or served with brown rice and mixed green vegetables, is a healthy light dinner that's easy to digest.

Healthy Recipe Ingredients & Instruction:

  • 2 medium carrots (preferably organically grown)
  • 8 oz. firm tofu (preferably from organically grown soybeans)
  • 2 tsp. virgin olive oil
  • soy sauce
  • Worcestershire Sauce
  • Wash carrots with a scrub brush (do not peel) and grate.
  • Pat tofu dry and chop into ¼ inch cubes.
  • Heat oil in a medium size frying pan over medium-high heat.
  • Add carrots to frying pan and stir to distribute evenly.
  • Sautee uncovered for 5 minutes, stirring occasionally.
  • Add tofu to pan and stir gently.
  • Sautee uncovered for 5 minutes, stirring occasionally.
  • Stir in approximately 1 tsp. soy sauce and ½ tsp Worcestershire Sauce (or to taste) and add 1 tbsp. water.
  • Cover pan and cook on medium low heat for 15 minutes.
