Frozen Carob Bananas
Healthy Frozen Carob Banana Treats
- 4 ripe bananas
- ¼ cup raw or roasted carob powder
- 2 Tbsp. honey
- 1 Tbsp. juice or water
- 1 cup desiccated, unsweetened coconut
- 4 wooden skewers (optional)
- Cookie sheet
- Plastic wrap
- Mix the honey & carob powder. Add enough juice or water to make it the consistency of thick apple sauce.
- Peel bananas & cut in ½ horizontally. Put coconut on a flat plate.
- Coat peeled bananas 1 at a time with carob mixture & then dip in coconut so banana is completely covered in coconut.
- Insert a skewer into each banana piece (like a popsicle).
- Cover top of cookie sheet with plastic wrap. Sprinkle any remaining coconut over plastic & lay bananas on coconut so they are not touching. Freeze until firm (approximately 4 hours).
- After they are frozen you can store them in a sealed plastic bag.
