Frozen Carob Bananas

Healthy Frozen Carob Banana Treats

  • 4 ripe bananas
  • ¼ cup raw or roasted carob powder
  • 2 Tbsp. honey
  • 1 Tbsp. juice or water
  • 1 cup desiccated, unsweetened coconut
  • 4 wooden skewers (optional)
  • Cookie sheet
  • Plastic wrap
  • Mix the honey & carob powder. Add enough juice or water to make it the consistency of thick apple sauce.
  • Peel bananas & cut in ½ horizontally. Put coconut on a flat plate.
  • Coat peeled bananas 1 at a time with carob mixture & then dip in coconut so banana is completely covered in coconut.
  • Insert a skewer into each banana piece (like a popsicle).
  • Cover top of cookie sheet with plastic wrap. Sprinkle any remaining coconut over plastic & lay bananas on coconut so they are not touching. Freeze until firm (approximately 4 hours).
  • After they are frozen you can store them in a sealed plastic bag.
