Coconut Rice Recipe

Healthy Coconut Rice Recipe

This easy side dish goes well with any poultry, fish or vegetarian entree.

  • 1 cup long grain brown rice (preferably organically grown)
  • 1¼ cup water
  • 1 cup coconut milk
  • ½ tsp. sea salt
  • Rinse rice under cold water until water runs clear
  • Drain rice
  • Place in a glass, enamel or stainless steel saucepan
  • Add water and bring to a boil, uncovered over medium high heat
  • Lower heat to lowest setting and add coconut milk and salt
  • Cover and cook until all the liquid is absorbed (approximately 45 minutes)
  • Do not stir. Let sit 5 minutes and then serve.

The coconut rice can be sprinkled with a little toasted coconut or slivered almonds.
