Healthy Coconut Rice Recipe
This easy side dish goes well with any poultry, fish or vegetarian entree.
- 1 cup long grain brown rice (preferably organically grown)
- 1¼ cup water
- 1 cup coconut milk
- ½ tsp. sea salt
- Rinse rice under cold water until water runs clear
- Drain rice
- Place in a glass, enamel or stainless steel saucepan
- Add water and bring to a boil, uncovered over medium high heat
- Lower heat to lowest setting and add coconut milk and salt
- Cover and cook until all the liquid is absorbed (approximately 45 minutes)
- Do not stir. Let sit 5 minutes and then serve.
The coconut rice can be sprinkled with a little toasted coconut or slivered
almonds.
