Coconut Recipe

Carob Coconut Balls Recipe

This healthy, no cook dessert or snack recipe is fun to make with kids.

  • ½ cup carob powder (roasted or raw)
  • ½ cup smooth peanut butter
  • ¼ honey (approximately)
  • 1 - 2 cups unsweetened shredded coconut
  • 1/8 tsp. nutmeg
  • ½ cup raisins (optional)

In a bowl, carefully mix the peanut butter and carob powder. Stir in enough honey to make it a thick sticky paste. Taste for sweetness.

Add 1¼ cups of coconut, the nutmeg and raisins, if desired. Knead everything together until well mixed. You should be able to form it into balls that hold together.

If it's too dry, add a little more peanut butter or honey.

If it's too wet, add more coconut. Form into walnut sized balls and roll in additional coconut.

Store in fridge in a covered container. These will keep for 2-3 weeks in the fridge.

This healthy recipe makes 18 - 24 carob coconut balls.
